Ham Hocks and Bean Soup

This is a really cheap way to make ham and bean soup. We are trying to save money in this economy and this soup makes a thrifty dinner. All you need to serve with it is bread.

Ingredients:

* 1 lb. navy beans

* enough water to cover the beans while they soak

* 2 qt. water

* 1 lb. smoked ham hocks

* 1 potato, cubed

* 2 carrots, sliced

* 1 onion, chopped

* 2 chicken bouillon cubes

* pinch of black pepper

Directions:

Soak beans overnight (or for at least 6 hours) in enough water to cover them by about one inch.

When you are ready to make the soup, drain the beans. Put the beans in a large pot with the 2 quarts of water, the bouillon cubes, and ham hocks. Bring it to a boil, then reduce heat and simmer until the beans are tender, 3 - 4 hours.

Add the onion, potato, and carrot. Cook until potato and carrot pieces are done, about half an hour. Add a pinch of black pepper to season it.
