Mom's Beefy Wild Rice Soup

When we cook wild rice, we make a big batch. Then, we use some of the leftover to make Mom's Beefy Wild Rice Soup. You can make this thick, like a stew or add tomato juice and make a thinner soup.

2 cups cooked wild rice
1 lb. hamburger
2 ribs celery, diced
1/2 lb. bacon, cut up
1 small onion, chopped
2 large cans stewed tomatoes
tomato juice, up top one can
salt and pepper to taste

Instructions:

Fry bacon, hamburger, onion, and celery together until hamburger is nicely browned.

Add tomatoes. Add salt and pepper to taste. Simmer for at least 30 minutes.

If you want it soupier, add some of the tomato juice.

About 10 minutes before serving, add the cooked wild rice and continue to simmer until the rice is hot.
