Split Pea and Ground Beef Soup

by MeMaw Lacy
(USA)

This split pea soup is different because it has ground beef and macaroni in it. It can be hard to find a split pea recipe that doesn't have ham or bacon in it. So if you don't eat pork, this Split Pea and Ground Beef Soup is for you.

Ingredients

* 2 lbs ground beef
* 1/4 teaspoon oregano
* 1/4 teaspoon basil
* 1 teaspoon seasoning salt
* 2 tablespoons dry onion soup mix
* 6 cups water
* 1 (8 ounce) can tomato sauce
* 1 tablespoon soy sauce
* 1 1/4 cups sliced celery, both stalks and leaves
* 1 cup sliced carrot
* 1/3 cup dried green or yellow split peas
* 1 cup uncooked elbow macaroni

Directions

In a large saucepan, brown meat, drain excess fat. Add the water and bring to a boil. Add the seasonings, tomato sauce, celery, carrots, and split peas. Reduce heat and simmer, covered, for about 30 minutes. Bring it back to a boil and add the macaroni. Reduce heat and simmer for another 20 - 30 minutes until the macaroni is done.
