Beef and Rice Soup

The "secret" ingredient that makes this beef and rice soup recipe so good is the ginger powder. It really livens it up and gives it exceptional flavor. We serve it with soy sauce.

Ingredients:

2 tbsp olive oil
3 medium carrots, peeled and chopped
3 medium celery stalks, chopped
1 cup broccoli stalks, chopped
1 tsp ginger powder
1/2 lb beef round steak, sliced
1 cup raw rice
3 cups beef broth
water
a handful of shiitake mushrooms, chopped
1 head bokchoy, chopped
salt and pepper

Directions:

Heat olive oil in a medium saucepan. Add beef and brown it. Add in carrots, celery, and broccoli and stir fry for a couple minutes.

Add rice, broth, and ginger powder. Add enough water so that the meat and vegetables are covered. Bring to a boil, then reduce the heat to simmer until the rice is cooked.

When the rice is cooked, add shiitake mushrooms and bok choy. Add salt and pepper to taste.
