Chowder Recipes: Clam Chowders, Corn Chowders, and More



Chowder recipes ... traditionally for rich, creamy soups often made with clams or corn. I've been told real, true chowders must include potatoes. Some say they must have at least some fish or seafood, allowing that it could be salmon or other fish instead of the clams.

Historically, they were flavored with salt pork and thickened with biscuits. These days, they are more apt to have bacon in them than salt pork. And, it is now more likely that what makes them thick is flour or pureed vegetables.

And then, there is Manhattan clam chowder. It's clear tomato broth defies the thick, creamy white base altogether.

Parmesan Corn Chowder Parmesan Corn Chowder is a rich and creamy vegetarian soup. The Parmesan cheese turns a basic corn and vegetable chowder into something special.

Corn Chowder with Lots of Bacon "Corn chowder." That's what I say when my wife tells me she's fried up a whole package of bacon and then asks me what to make with the extra. She makes the best corn chowder -- I think it is just because she uses a lot of bacon in it. I really, really, like bacon.

Tomato Clam Chowder Recipe Tomato Clam Chowder is a recipe for Manhattan Style Clam Chowder. Its clear broth is full of fresh vegetables. Canned tomatoes and canned clams make it simple to put together.

Corn and Sausage Chowder Corn and Sausage Chowder is a hearty pick-me-up for a cold day. Red pepper flakes give it a bit of zip. The variation includes pimento cheese spread.

Clam and Cauliflower Chowder If you are allergic to potatoes, or just don't want to eat them, this clam and cauliflower chowder is for you. Some people can't tell the difference and think it has potatoes. I think it is healthier with the cauliflower and not so starchy.

2 Minute Corn Chowder I call this 2 Minute Corn Chowder because it doesn't take very long to make. 2 minutes to put it together and 2 minutes to cook. Use that already cooked bacon or bacon bits. If somebody in your family doesn't like onion, leave out the onion salt.
