Clam and Cauliflower Chowder

If you are allergic to potatoes, or just don't want to eat them, this clam and cauliflower chowder is for you. Some people can't tell the difference and think it has potatoes. I think it is healthier with the cauliflower and not so starchy.

Ingredients:

* 2 cans minced clams, including the juice

* 1 pkg. frozen cauliflower, cut into smallish pieces

* 6 slices bacon, fried crisp and broken up

* 1 carrot, chopped or grated

* 3/4 cup margarine

* 3/4 cup flour

* 1 can evaporated milk

* 1 1/2 cups milk

* 1 1/2 tsp. seasoning salt

* dash pepper

* 1 tsp. sugar

* few drops Tabasco sauce

Directions:

Melt margarine in a heavy saucepan. Add the flour and stir. Add the regular milk and the evaporated milk. Cook until smooth and thick, stirring constantly. Add the remaining ingredients and simmer for 30 minutes.
