Corn Chowder with Lots of Bacon

by Bob

"Corn chowder." That's what I say when my wife tells me she's fried up a whole package of bacon and then asks me what to make with the extra. She makes the best corn chowder -- I think it is just because she uses a lot of bacon in it. I really, really, like bacon.

Corn Chowder with Lots of Bacon

1 can whole kernel corn (including the liquid)

1 can cream style corn

1 can sliced potatoes, each slice quartered (including the liquid)

1 can cream of mushroom soup

1 soup can milk

1 cup crispy fried bacon, crumbled

Dash hot red pepper sauce

Salt and pepper to taste

Extra bacon for garnish, fried crisp

Combine and heat all the ingredients -- except for the extra bacon. Ladle the hot chowder into serving bowls. Top with the extra bacon garnish.

I like this with saltine crackers, ice cold milk to drink, and some fresh fruit for dessert.

Try it and let me know if you like it.
