I like to top this cheese soup with all sorts of fun things. Try a handful of popcorn! Or some crushed tortilla chips. If you like things hot, try a few jalepeno pepper slices! Yummers!
* 1/2 cup carrots, shredded
* 1/2 cup celery, sliced thin
* 1/2 cup onion, chopped fine
* 3 Tbsp. margarine
* 1/4 cup flour
* 1 cup milk
* 10-12 oz. chicken broth
* 3/4 cup water
* 1 1/2 cup Velveeta cheese, cubed
Saute onions, carrots, and celery in margarine until tender. Add the flour, and stir. Slowly add the milk, stirring briskly to keep it smooth. Add the broth and water and bring to a boil. Reduce the heat to simmer. Add the cheese, and stir over low heat until melted.
