Chicken Soup with Garlic

Chicken Soup with Garlic is wonderful comfort food when you or someone in your house has a cold. The combination of hot soup and garlic can really make you feel better fast. Try it and see for yourself.

Ingredients:

* 4 boneless skinless chicken thighs
* 3 cans chicken broth
* 4 garlic cloves, minced
* 1 small onion, chopped
* 1/2 tsp thyme
* 1 bay leaf
* 1 carrot, sliced
* 3 celery ribs, sliced
* 1/4 tsp. salt
* 1/8 tsp. pepper
* 4 oz egg noodles

Directions:

Put it all, except the egg noodles, into a soup kettle and bring to a boil. Lower the heat and simmer about 45 minutes until the chicken thighs are tender.

Raise the heat and bring it to a boil. Add the egg noodles. Lower the heat and cook for about 10 minutes or until the noodles are done. If you cook it too long the noodles will fall apart.

When you serve it, put one chicken thigh in each soup bowl and then ladle the broth, vegetables, and noodles on top of it.

If you like your chicken soup spicy, add a pinch of hot red pepper flakes with the first ingredients.
