A quick and easy corned beef soup recipe that doesn't take all day to fix. It is good and good for you. The canned limas give it a healthy protein and fiber boost.
* 3 cups cabbage, chopped
* 1/2 cup onion, chopped
* 2 cup water
* 1 can lima beans, undrained
* 1 can condensed bean with bacon soup
* 1 Tbsp. mustard
* 1 can corned beef, diced and chilled
Simmer cabbage and onion in the water, covered for 8-10 minutes or until tender. Stir in the beans and any liquid that is in the can, the can of bacon and bean soup, the mustard, and the corned beef. Heat just until hot. Serves 4.
You can make this without the canned bean and bacon soup and it will still be good. It just won't be as thick.
