Cream of Broccoli and Avocado Soup

Cream of Broccoli and Avocado Soup is rich and delicious. There's no need to be afraid of using the avocado in this soup recipe. It gives it a special creaminess.


Cream of Broccoli and Avocado Soup Recipe

Ingredients:

* 1 Tbsp. butter
* 1/2 cup onions, chopped
* 1/2 cup celery, thinly sliced
* 1 cup potatoes, cubed
* 1 cup broccoli florets
* 2 avocados, peeled, pitted and cut into pieces
* 6 cups chicken broth
* 1/2 cup fresh cilantro, chopped
* salt and pepper to taste
* 1/3 cup heavy cream

Directions:

Melt the butter in a large saucepan and saute the onions and celery. Add the potatoes, broccoli, avocados, chicken broth, and cilantro. Season with salt and pepper and simmer for 20 minutes over low heat.

Using a food processor, puree the mixture, then return it to the saucepan. Or, use a stick blender to puree it in the pan. Heat soup lightly and stir in the cream.

If you don't have fresh cilantro, you can substitute a teaspoon of dried cilantro leaves. Or, you could use a half teaspoons of ground coriander.

Cream of Broccoli and Avocado Soup makes a pretty first course. To make it extra attractive, top each serving with a spring of fresh cilantro.
