Hamburger Taco Soup

All the yummy taste of tacos -- but in a bowl! Be sure to have grated cheese, chopped onions, or whatever toppings you like on your taco ready to add to your bowl of Hamburger Taco Soup.

Ingredients:

* 1/2 lb. ground beef
* 1 small onion, chopped
* 1/2 bell pepper, chopped
* 1 stalk celery, chopped
* 3 cloves garlic, minced
* 2 Tbsp. tomato paste
* 1 can Rotel Tomatoes
* 1 12 oz. can V-8 Juice
* 1 can refried beans
* 1 package taco seasoning mix

Directions:

Brown ground beef in a large pan, breaking it apart. Add onion, garlic, bell pepper and celery, and saute until the vegetables are soft. Add the tomato paste, Rotel tomatoes, V-8 juice, refried beans, and taco seasoning mix. Cover and cook on low for at least half an hour. If it is too thick for you, you can add more V-8 juice or some water, but we like it thick.

Serve over corn chips. Garnish with diced raw onions, sliced black olives, chopped tomatoes, sour cream, grated cheddar cheese, chopped avocado, or your favorite taco toppings.
