Poppa Pete's Beef and Barley Soup

Poppa Pete's Beef and Barley Soup is named after my beloved granddad. He made this for us for supper on cold winter nights. A big bowl of his soup always warmed our tummies and our hearts. We loved Poppa Pete and his beef and barley soup. Poppa has gone to heaven but we still have his soup. I hope you like this recipe as much as I do.

Ingredients:

* 1 tablespoon vegetable oil
* 2 cloves garlic, minced
* 1 small onion, chopped
* 2 ribs celery, sliced
* 2 medium carrots, sliced
* 8 ounces mushrooms, sliced
* 4 cups beef broth
* 1/4 cup barley
* 4 ounces stew beef (beef cut in cubes)
* 1/4 teaspoon black pepper

Preparation:

Heat oil in a Dutch oven or heavy saucepan. Add the beef cubes and brown them on all sides. Add the garlic, onion, celery, carrots, and mushrooms and saute for a few minutes more. Add beef broth and barley. Bring to a boil. Cover and reduce heat. Simmer the soup for about an hour, or until beef and barley are tender.
