Quick Curried Tomato and White Bean Soup is a vegetarian meal the whole family can enjoy. It is ready in about 20 minutes. The spices smell wonderful as they are sauteing.
* 1 Tbsp. vegetable oil
* 1 cup chopped onions
* 1 Tbsp. curry powder
* 3/4 tsp ground ginger
* 2 (15-oz.) cans Great Northern or white navy beans
* 1 (28-oz.) can diced tomatoes, do not drain
* 2 cups water
Heat a large saucepan over medium heat. Add 1 tablespoon oil and the onions. Saute until the onions are tender, but not brown. Add curry and ginger to saucepan and stir briefly.
Add beans, tomatoes, and water. Bring to a boil, stirring occasionally. Reduce heat to low and simmer 15 minutes.
