Zucchini Soup - Simple and Mild


(The Mild Flavor is Especially Good for Kids)

This zucchini soup is simple to make and very mild. It makes a good soup for children or anyone who doesn't like things spicy. Puree it for a smooth and cream bisque, or leave it chunky.

It is not necessary to peel the zucchini for this recipe. For young, small, zucchini, ust trim off the ends. If you are using larger, more mature ones, you may want to cut them in half and remove the large seeds, especially if you are not going to puree it.

Ingredients:

* 2 cups sliced zucchini
* 2 cups water
* 3 chicken bouillon cubes
* 1 cup milk

Directions:

Put water, chicken bouillon cubes, and zucchini in a medium size saucepan. Bring mixture to a boil, then turn heat down to low, and cook until the zucchini is tender. For a smooth, creamy soup, pour the cooked mixture into a blender contatiner and puree. Return the pureed mixture to the saucepan and add the milk. Reheat the soup until it is hot, but do not boil it after adding the milk. Serves 4.

If you like a chunky soup, it is not necessary to puree the mixture. When the zucchini is tender, add the milk and heat until it is hot.

For vegetarian zucchini soup, use vegetable bouillon cubes instead of chicken. You may also use a non-dairy milk substitute.
